Goodbye January

Today is the last day of the first month of the new year. Looking back, I feel stronger and more in control of my future because of the choices I've made these past thirty-one days.


Today I went shopping for Valentine's Day goodies to mail to my parents and grandparents. I applied for a new job working for CYS (child & youth services) as an Administrative Assistant. and then I had a strenuous two hour gym session this afternoon.



I made a very delicious and healthy dinner for my husband and I, and I even found the time to help a friend with a problem. My German friend Shari was having difficulty reading and understanding her VISA application and college information that she received in the mail today. She has applied to a school in Charlotte, North Carolina and will be moving to the states this summer to work on her nursing degree. I'll miss her so much but this is a great opportunity for her and I am so proud of her.


Garlic Chicken Parmesan
Here's my recipe-

Ingredients:
  • 1/2 cup grated Parmesan cheese 
  • 1/2 cup butter 
  • 2 cloves garlic, chopped 
  • 1 tablespoon Worcestershire sauce 
  • 8 bone-in chicken breast halves, skinless 
Directions:
  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. 
  2. In a shallow dish or bowl, pour the Parmesan cheese and set aside. Melt butter in a small saucepan; add garlic and Worcestershire sauce and sauté garlic until tender. Remove from heat. 
  3. Dip chicken breasts in garlic butter mixture, then roll in the cheese, coating thoroughly. Place coated chicken in the prepared baking dish. Drizzle with any remaining garlic butter mixture. 
  4. Bake in the preheated oven for 30 to 40 minutes, or until chicken is no longer pink and juices run clear.
