Today is the last day of the first month of the new year. Looking back, I feel stronger and more in control of my future because of the choices I've made these past thirty-one days.
Today I went shopping for Valentine's Day goodies to mail to my parents and grandparents. I applied for a new job working for CYS (child & youth services) as an Administrative Assistant. and then I had a strenuous two hour gym session this afternoon.
I made a very delicious and healthy dinner for my husband and I, and I even found the time to help a friend with a problem. My German friend Shari was having difficulty reading and understanding her VISA application and college information that she received in the mail today. She has applied to a school in Charlotte, North Carolina and will be moving to the states this summer to work on her nursing degree. I'll miss her so much but this is a great opportunity for her and I am so proud of her.
| Garlic Chicken Parmesan |
Ingredients:
- 1/2 cup grated Parmesan cheese
- 1/2 cup butter
- 2 cloves garlic, chopped
- 1 tablespoon Worcestershire sauce
- 8 bone-in chicken breast halves, skinless
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a shallow dish or bowl, pour the Parmesan cheese and set aside. Melt butter in a small saucepan; add garlic and Worcestershire sauce and sauté garlic until tender. Remove from heat.
- Dip chicken breasts in garlic butter mixture, then roll in the cheese, coating thoroughly. Place coated chicken in the prepared baking dish. Drizzle with any remaining garlic butter mixture.
- Bake in the preheated oven for 30 to 40 minutes, or until chicken is no longer pink and juices run clear.
